New Year’s With a Twist

Since its opening in the spring of 2018, Dominion Bar + Kitchen has delivered that special something that raises it beyond the average hotel bar and restaurant. Located in the lobby of the Civic Hotel, this bright, warm space successfully captures the spirit of inclusion and diversity that reflect the surrounding community and emerging urban hub that are redefining Surrey’s City Centre. “It’s how people feel when they’re in here,” says Darren Pierce, General Manager, himself a relative newcomer from Ireland. “It’s somewhere where you can enjoy a good meal and conversation with our friendly staff, and feel really good no matter where you come from.”

While Dominion quickly became the preferred place to go for impromptu business lunches and client meetings within the surrounding business, academic and high-tech hub, it has also become a favoured destination for locals who are drawn to its warmth and friendly hospitality. “We’re seeing lots of lawyers and architects, but we’re also seeing people getting together for culture-rich events, like families celebrating someone’s birthday or having a drink after work. It’s a really good mix of all sorts of backgrounds.”

To celebrate the New Year, Dominion is hosting a special dinner. The dinner includes a three-course meal from the restaurant’s creative and highly popular menu, along with a glass of wine, bottle of beer or single-well drink, for $50. Then guests can dance their way in to 2019 to music spun by DJ Earl Mendez with bar service available until 2 am. Reservations are recommended.

As for Darren Pierce, he’ll be ringing in the New Year with one of his favourite new cocktails, the Century Mule. As with all food and beverages on Dominion’s innovative New Canadian menu, he’s put a twist on an old classic.

Century Mule

Garnish: Thyme, lime wheel and candied cranberries

Combine all ingredients (except the ginger beer) into a shaker filled with ice and shake for 15 seconds. Strain into an ice-filled mule cup and top up the drink with ginger beer. Add the garnish and enjoy!
